Coconut Pancakes with Raspberry Reduction

If there was any doubt about the gluten content of these pancakes, it’s zero. I know this because had my co-chef, Bria, eaten just one gluten, she would have…actually I’m not sure what happens when someone who must medically avoid gluten consumes gluten. Is it like Gremlins? I didn’t want to find out, so I let her prep the wet and dry ingredients with her gluten-free approved foods prior to showing up at her place.

As peace-offering for arriving late and not witnessing the expert mixing of the dry stuff (boring), I produced some warm Diet Coke and a bottle of hard cider I had home-brewed a while back, which, if you aren’t aware…are both gluten-free like these pancakes.

ONE OF US made a bee line for the warm Diet Coke (not me) while ONE OF US (me) opened the classy bottle of hard cider and poured it into some classy glasses that I later found out were heirlooms. Or as I’m told, “Heirlooms, but not like in a big deal way. I mean my great grandma saved them from the Nazis before the war nbd.” The credibility of this statement is highly questionable.

I made the stuff about a year ago with some unpasteurized apple cider, saison yeast and a ton of Mosaic hops added during fermentation. It’s a super dry, highly carbonated cider that I really enjoyed and of course, wasn’t able to replicate on my second attempt a few months back. As a celebration of my flash-in-the-pan cider-making brilliance, I thought this was a fitting finale to the last bottle of the original cider batch. A little in the raspberry reduction, some in my glass and some dope pictures in a pleasantly lit kitchen. Booyah.

It’s at this point I forced Bria to relinquish culinary control as she confessed that she flips her pancakes multiple times. I’m not going to eat gluten-free pancakes that have been manhandled and abused for absolutely no good reason, so I got a sweet AF copper pan nice and hot and started dropping batter.

I admittedly don’t have much experience with gluten-free cooking (but enough to know not to flip gluten-free pancakes more than once) and was surprised to see how quickly they browned up. Flip ’em fast, folks! Or at the very least, keep a close eye on these gluten-free pancakes. There is no gluten in these pancakes, remember that.

All in all, these gluten-free pancakes were impressive. They had a nice rise even though the pancakes had zero gluten, had excellent texture and a slightly sweet flavor. Props to Bria on an excellent batter recipe. What she lacks in spatula execution, she makes up for in killer gluten-free pancake instincts.

She also served as an excellent raspberry reduction spooner and hand model for the pictures. Please note the stunning natural light as well as expert application of scrunchy and succulents. It’s like a photographers dream.

That’s it. We ate them. We both agreed they are delicious (duh). Then I did the dishes while Bria changed the music that was playing 30 seconds into every song and apologized profusely for it, although I don’t think she was actually sorry. 10/10, would Sunday again.

Gluten-Free Coconut Pancakes and Raspberry Reduction

Ingredients

Pancake Batter

  • 1 1/2 cup Almond Flour (Not Bob's Redmill, it sucks)
  • 3 tbsp Tapioca Flour
  • 1 tbsp Coconut Flour
  • 1 1/2 tbsp Baking Powder
  • 1 tbsp Coconut Oil
  • 3/4 cup Almond Milk
  • 2 Eggs
  • 1-2 tbsp Raw Honey
  • Kosher Salt

Raspberry Reduction

  • 12 oz Frozen Raspberries
  • Water
  • 1/2 Lemon Juice
  • 2 tbsp Sugar
  • 1 tbsp Raw Honey
  • 1 tbsp Coconut Oil
  • 6 oz Hard Cider

Beverage Pairing

  • 8 oz Hard Cider
  • 3 Buckets of Diet Coke

Music Pairing

  • 30 Seconds of Each Song on Your Playlist of Choice

Instructions

Pancake Batter

  1. Combine almond flour, tapioca flour, coconut flour and baking powder in a bowl and mix well.

  2. Melt coconut oil and cool. In a separate bowl, add almond milk, honey, eggs, salt and cooled coconut oil and mix well. So help me, that coconut oil better be COOLED.

  3. Make a well in the dry ingredients and add the wet ingredients and mix until combined, but leave some lumps. We like the lumps, got it?

  4. Let the batter rest for 15 minutes, this is a good time to start your raspberry reduction and fetch yourself a lukewarm Diet Coke.

Raspberry Reduction

  1. Get a saucepan and add the frozen raspberries, enough water to cover the raspberries, the juice of half a lemon, honey, coconut oil, sugar and hard cider on medium high heat.

  2. Let it reduce, dingus.

  3. Oh, stir it a lot and don't let it boil over.

Pancake Execution

  1. Get a pan nice and medium-ly hot for your batter. I used a little bit more coconut oil as anti-stick insurance. Pour about 1/4 cup batter into a pan/griddle/cooking apparatus per pancake and watch closely. Almond flour can burn quickly if you aren't careful.

  2. Flip pancake. ONCE. Resist anyone's request to flip pancakes multiple times. Use force if necessary.

  3. Plate pancakes and spoon the raspberry reduction as topping while wearing a scrunchy. Take several pictures of this happening.

  4. Post a blog about it. (optional)
